Goodness Me Box December

Hello and welcome back, today I wanted to share with you some photos of my December Goodness Me Box - if you not sure what I'm talking about read HERE first!
I am particularly impressed with this months as it has stuff I know I like and have used, stuff that I like the look of and completely new things I'm excited to try!


This is the one that I've never heard of before! It looks like it will be a great addition to my cooking - it has a recipe on the recipe card for savoury balls which surprised me as I thought it was going to be like an oats type of thing! 


Love this company and the fact that there is NO additives to their spreads - the hazelnut one is my favourite of theirs but I'm keen to try this one out, the sesame I think will either be amazing or slightly random - I'll have to report back!


Love this! A month or two back I got a raspberry and chis one of these and I love it! Mango and Passionfruit are my favourite fruits so I know this is going to go down a treat - and again there is no funny stuff added - bonus!


Ahhh coconut powder?! YES please! I always drink coconut water so if this tastes amazing I am going to be one happy camper! Most refreshing thing to drink after a workout! 


Never seen or heard of this but I cant go past a good looking health bar - I always keep a few stashed in my handbag for those starving moments! 


ahhhh my favourite thing to add to salads - this mini size is great too as I can pack it and add to lunches and not have to worry about spillage or sogginess! 


Tea, glorious tea! I am a coffee addict but I do love a good cuppa! I've already had the vitality one and can confirm it is good! It kept my 3pm snack attack at bay so that's a win in my book! I'm yet to try the ginger one but I think this at night may go down a treat.

THIS WEEK: Top 5 Eats

Why hello there, welcome to a THIS WEEK post; where funnily enough i'll be posting something random for this week (great concept right?)
~
Anywho this week I wanted to share with you my at the moment top 5 favourite food items. I am one of those people who goes through phases of obsessions with certain foods and consume them as much as humanly possible until I either get sick of it or move onto the next obsession. I went through a phase as a kid of being addicted to butter menthols - cant stand the thought of eating them now as I overdid it! Here is hoping I don't do that again with any of my favourite foods!

#1 Pepita Seeds
I am just loving these little fellas at the moment. Small, green, crunchy - perfect addition to my granola, top of smoothies, in salads, on top of half an avocado as a snack - the list just goes on and on! Give them a go if you've never tried them before, something about the crunch of it is entirely satisfying, and the fact that they are green pleases me oddly.


#2 Granola
I'm more than sure I don't need to harp on about this one too much, if you've read THIS POST then you get it (are you addicted yet??)


#3 Almond Flakes
Ahhh almond flakes, there is just something about them being cut this way that I really like, I prefer this style of almond over whole or chopped - the thin-ness and crunch... so good! I have been having a handful mixed in with my all time fav breakfast (recipe HERE), or roasting some to top salads with, and of course they are a big feature in the Granola and I may stand in the kitchen picking them out to munch on! #obsessed



#4 Tahini Dressing
Lately I have been trying to spruse up meals with interesting salad dressings - you make a good dressing you can make the entire meal that much better in my opinion! A new favourite of mine that I go to a few times a week is incorporating Tahini!
oh merrrr this is so TASTY! It is also boyfriend approved which is a sure sign its good right? This dressing is so perfect with fish and salad - try it on your next meal I dare ya!
Recipe: Tablespoon of Tahini Paste
Juice from half a lemon
Juice from half a lime
Dash of soy sauce
Put it all into a jar and shake it up and top on salads or fish!


#5 Hazelnut Cocoa Spread
Oh me oh my.... as a nutella addict this may be my most favourite find this year.... yes!
Nutella is all full of sugar and has no nutritional value so I try to avoid it, so when browsing in the health food in Coles I spotted this and nearly did a dance right then and there as I scanned the jar.
IT TASTES LIKE NUTELLA PEOPLE!
But it only has hazelnuts and cacao and its organic..... I mean!!?!!
This is the ultimate treat for me, I am obsessed! I have it spread over quiona brown rice crackers and sometimes I just have a spoonful (my favourite way to eat it), it also tastes amazing put into a protein smoothie with banana!


So there we have it, 5 of my favourite food items right now, here is hoping I don't overeat any of them so that it turns me off.... highly doubt it!

Quinoa Fried Rice Recipe

Welcome back to another food post!


So, each Sunday I make myself a batch of something that I can take to work for lunch each day. It makes getting ready for work in the mornings that much easier and my entire week that little bit less stressful, knowing I have something yummy, healthy and filling waiting in a container to grab and go is amazing. Each week it will be something different, from wraps, to baked salmon, to chicken and salad. Last week I decided I wanted to have Quinoa with veggies and so I ended up making my version of 'fried rice'
Let me tell you, it was deeeeelish! So I wanted to share the recipe with you all.

Ingredients:

1 Cup Quinoa
Chicken or Vegetable Stock
Garlic
Onion
Mushrooms
Broccoli
Sweet Potato
Corn
2 Egg Whites
Himalayan Pink Salt
Pepper
Cayenne Pepper
Turmeric

Method:

Step 1: Place a cup of quinoa with 2 cups of water into a saucepan on high. Add in garlic, cubed sweet potato and x3 chicken stock cubes, once it reaches boiling put in onto low heat and cover
Step 2: Take out a large fry pan. Cook the onion until brown. Add in chopped broccoli, mushrooms, sweet corn, salt, pepper and cayenne pepper, continually stirring
Step 3: Once the quinoa has puffed up and isn't crunchy to taste, add it into the pan with the veggies. Mix all together for a few minutes
Step 3: Move the mixture to one side of the pan and crack the two egg whites into the pan. Let it cook on each side then chop up using the spatula
Step 4: Mix everything together in the pan one last time then divide into 5 containers
Step 5: Enjoy a delicious lunch each day of the week stress free!

My Ultimate Breakfast

Why hello there,
Today I am sharing with you my most favorite breakfast of all time...ever. Protein Pancakes are a strong second, and some days an equal first; but my heart belongs to this breakfast purely because I can make it quicker than protein pancakes! Which means this is my Monday-Friday first choice then the Protein Pancakes go perfectly with weekend relaxing. It's truly a win win I tell you.

Ok so my love of breakfast was a slow growing thing. Growing up I absolutely hated having to eat breakfast, in fact there were often mornings where I would get up earlier than Mum, go to the kitchen and put some milk in a bowl with a spoon and then leave it in the sink so it looked like I'd eaten ... how bad is that!?!
(Sorry Mum!) 
It was around the time I was 16 when I started to be a lot more interested in health and fitness (really I was just a young girl wishing she had abs haha) so I did start to eat breakfast. It was your typical cereals or toast, nothing that exciting so I didn't really enjoy it all that much. Fast forward to me moving out of home and deciding that my health and body were highly important to me if I wanted to live a long and happy life and that now I lived without the comfort of my parents it was something I needed to focus on, therefore I realized breakfast was truly the most important meal of the day. I read a lot about what's the perfect thing to eat first thing in the morning but found it hard to incorporate all the different elements such as healthy fats, protein, fruits, carbs etc. However, slowly but surly as I researched, found foods I really liked and combined so that now I have managed to find my ultimate breakfast! It's honestly got it all and its so tasty that I am always happy to wake up in the morning because I know I have this amazing taste-bud pumping meal to enjoy. Most mornings I get up and immediately go for a run, which means when I am about halfway back home I get excited at the thought that I can eat breakfast soon! 
I try to have my first meal of the day as my biggest meal, and then have 2 small snacks and 2 medium size meals for the rest of the day. Starting off with a big filling breakfast gets me going for the day, keeps me full until mid morning and gives me the energy I need to really start my day with some force!

As you'll be able to see by the extensive photos below - I am addicted! Read on to see exactly whats in this amazing bowl of goodness. 













Ingredients: Here is what I have in it 90% of the time, the other 10% of the time I will vary the fruits I put on-top depending on the season.

Kamut Puffs: these little puffs are ancient grains that have a nutty flavour to them. they are easier to digest compared to other wheats and contain a higher amount of protein! I like to think of them as Rice Crispies older, bigger and healthier sister! 

Walnuts: I use about a handful and smash them up into small pieces. Walnuts have anti-inflammatory benefits along with a high dose of omega 3 fats which are perfect to start the day off with 

Chia Seeds: these teeny tiny little seeds contain a high amount of essential fatty acids which help to speed up your metabolism and help your muscles to recover. Plus they also become a gel consistency when liquid is added to them!

Cinnamon: this spice helps to regulate your blood sugar levels which helps to maintain your energy during the day. It also helps to kick your metabolism into high gear - and I'm addicted to the flavour!

Honey: ahhh the sweet stuff, yep I do just like adding this for that extra sweet taste to my breakfast but it is also jam packed with antioxidants which help protect your immune system!

Greek Yogurt: filled with protein and calcium and helpful for your guy, greek yoghurt is the perfect alternative to yoghurt, and it makes my breakfast stick together once I blend it all up

Strawberries: other than just tasting amazing, strawberries are packed with antioxidants and vitamin C, which is a perfect combo to give you glowing skin

Passion-fruit: obsessed is a word I use lightly with my addiction to passionfruit, it is true love I tell you! It is full of Vitamin A and C which helps with eyesight and soft skin so its a definite win!
